Day 2: Baby Kale, Mozzarella, and Egg Bake




Today's new baby kale recipe came in the form of breakfast. Kalyn's Kitchen blog has several baby kale recipes as she was also excited to find organic mixed baby kale on her grocery store shelf.

This was a great breakfast! Served with a dollop of plain yogurt, it made me feel good to start my day in such a healthy way. It did take a little longer to make than my breakfasts usually do, but now I have leftovers for the next few days, so it balances out.

The Baby Kale Project

While Costco has to be one of my favorite places to shop on a regular basis, trips nearly always have the same outcome. I walk out with a cart full of beautiful, nutritious produce, and a head full of visions of all of the amazing and healthy salads I will make. But alas, before I know it, things start going bad and I end up throwing way too much away before I have a chance to use it.

Today I walked out with a gigantic bag of organic mixed baby kales ready to take on the challenge of using it all by trying at least one new recipe each day. (Don't you just LOVE summer vacation?!)

Day 1: Garlic Baby Kale with Crushed Red Pepper




I used a recipe from The Gracious Pantry, adding quinoa and sun-dried tomatoes to add a variety in texture, and to make it a complete meal. It turns out that sautéed greens still aren't my favorite thing, but this had good flavor. Unless your mouth can handle a decent amount of spice, I would cut the amount of red pepper flakes in half.

Crunchy Kale and Coconut Bowl

I loved this. It was chewy and salty and earthy and savory. Abby and I made it together, and then I made it again two days later. Joy the Baker is one of those blogs that i trust, and that is a "go-to" when I'm looking for a good recipe.

Baked Salmon Croquettes

Flavorful and tasty! First time I've experienced canned salmon, and it very much reminded me of tuna, which I like. These were yummy with tomato and avocado on top.

Chicken Pot Pie modified from Annie's Eats. Biggest changes were to use store-bought puff pastry instead of making my own dough, and putting cream cheese in the sauce. Stellar idea.

I really liked the cute presentation of these, and how each person gets their own cup (or two...).
