While Costco has to be one of my favorite places to shop on a regular basis, trips nearly always have the same outcome. I walk out with a cart full of beautiful, nutritious produce, and a head full of visions of all of the amazing and healthy salads I will make. But alas, before I know it, things start going bad and I end up throwing way too much away before I have a chance to use it.
Today I walked out with a gigantic bag of organic mixed baby kales ready to take on the challenge of using it all by trying at least one new recipe each day. (Don't you just LOVE summer vacation?!)
Day 1: Garlic Baby Kale with Crushed Red Pepper

I used a
recipe from The Gracious Pantry, adding quinoa and sun-dried tomatoes to add a variety in texture, and to make it a complete meal. It turns out that sautéed greens still aren't my favorite thing, but this had good flavor. Unless your mouth can handle a decent amount of spice, I would cut the amount of red pepper flakes in half.
